Hazelnut bites

You may have heard of amaretti biscuits – they are delicious bite sized cookies that originated in Italy. But did you know you can use different nuts to create tasty versions?
This recipe is very easy to make and only has four ingredients. You can whip them up before a friend pops in for a cuppa, or drizzle with melted chocolate to create a decadent treat. You can use hazelnut or almond meal – stock up when they’re a half price special at the supermarket. They are also gluten free.
Ingredients:
70g egg whites (about two decent sized eggs)
190g sugar
250g hazelnut meal
Squeeze honey (about 1 tablespoon)
Method:
Preheat your oven to 180C.
Whisk the egg whites until they’re frothy then add the sugar slowly. You can use a mixmaster, hand beaters or a whisk by hand. Whisk for another three minutes or until the mixture is thick and white. Add the rest of the ingredients. Roll into small balls, about the size of a walnut and roll in icing sugar. Let them rest for 15 minutes then cook on a lined baking tray for 12-15 minutes until they are golden and cracked.
