Creamy baked beans

These beans make for a delicious side dish you can pop in the oven while you make the rest of dinner. The recipe is adaptable so you can decide which beans and additions you like best.

Ingredients

  • 1 450g tin of butter beans or cannellini beans, rinsed.
  • 1/2 cup cream, approx
  • 1/2 an onion, red or brown, finely chopped
  • 1 clove garlic, crushed
  • A sprinkle of cheese, parmesan or cheddar
  • Salt and pepper to taste

Method

Pre-heat oven to 190 degrees. Put the rinsed beans in a small overproof dish and cover with the cream. Add onion, garlic and salt and pepper and give it a gentle stir to combine. Top with a light layer of cheese. Bake in the oven for about 15-20 minutes until it’s bubbling and the cheese is browned. Serve immediately.

Note: You can add a dash of white wine or a teaspoon of stock powder for extra flavour.
