Choc Chip Slice

This slice is perfect if you feel like cookies but can’t be bothered rolling them all out! It’s great for school or work lunches, or with a cuppa.

Ingredients

  • 125g butter, chopped
  • 155g (3/4 cup, firmly packed) brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 190g (1 1/4 cups) plain flour
  • 3/4 tsp baking powder
  • 100g (1/2 cup) milk choc chips

Method

Preheat oven to 160C/140C fan forced. Grease a 16.5 x 26.5cm slice tin and line with baking paper. In a small saucepan, melt the butter over a low to medium heat. Add the sugar and stir until dissolved (this might take a few minutes). Transfer to a bowl to cool slightly. Add the egg and vanilla to the bowl. Whisk until combined, or you can use an electric mixer. Sift over the flour and baking powder. Stir until combined. Stir in half the choc chips until combined. Spread the mixture into the pan. Bake for 20 minutes or until it’s golden around the edges. Set aside in pan to cool completely, then cut into pieces. Store in an airtight container.
